Yesterday was chili cheese dogs!! we all know what hotdogs look like so no need for a photo attachment here. Besides I didn't make it. Guess men don't eat with their eyes :lol2:

Tonight I made BBQ chicken wings marinated in honey, soy and sweet chilli sauce, with home made mashed potatoes and green salad. And carrot cake for dessert.

Tonight I made sausage and chicken paella. Not bad.

I spent a summer in Spain when I was in college, and I swear, I got SO sick of paella! I swore that they used it as a clever way to clean out the cabinets...you just never knew what you were going to find mixed in. I also loathe seafood, so meal times were interesting. I lost several pounds that summer! I just remember talking to my mom before I flew home and asking her to pleeeeeeease have lasagna waiting on me. She did. :)

Tonight we are having New York Strip steaks on the grill with some sweet potatoes and some chocolate/raspberry wine............aaaaaaaaah, so yummy!

Lol, I barely cook so paella was a treat.

LOL...I decided that the only thing worse than dorm food was Spanish dorm food! :)

Let see... I had smoked sausage, baby back ribs, hot rolls, potato salad, green beans, mac & cheese, beans, and corn. I'm stuffed :o

I've never cooked eggplants. I'm actually scared to even try. I do like some eggplant dishes though. Your plate looks yummy. Recipe please :D

Chinese with my mom. We had it family style. Let see.. seafood fried rice & soup, lobster, crab, oyster, clams, beef & veggies, and white rice. Each was a dish and I ate a belly full and for a doggie bag :blush:

I cooked it for the first time quite recently, after only eating it in the Greek dish "moussaka" at a restaurant. This is very simple though! And lovely if you like eggplant. To be honest, I don't really know the difference between vegetarian and vegan, but maybe this is something you can eat on your vegan diet?

For two persons:

1 eggplant (of the regular big ones)
a big handful of mushrooms, I use champignon, sliced thin
2 cloves minced garlic
a half red onion chopped
1 tomato seeded and diced
2 diced "pimiento del piquillo" (regular sweet red peppers is probably also ok, but I have not tried them in this dish)
salt, pepper, parsley
grated Parmesan cheese

Preheat oven to 400 degrees F (200 C) Wash eggplant and cut of stem, then cut in half and remove pulp leaving just a shell. Dice the pulp.

Saute garlic and onion in olive oil until onion is tender. Add the eggplant pulp and mushrooms, cook for 4-6 minutes. Add tomato and peppers, salt, pepper and parsley and cook for 2 minutes more.

Fill the eggplant shells with mixture and bake in the oven for about 15 minutes, then take them out and sprinkle with Parmesan. Cook for 5-8 minutes more.

We like couscous (with added butter and Parmesan), but they are great alone or with garlic bread or rice too.

Tonight I had a protein shake, a cup of pineapple and apple!!!! OH yes! and I found those yummy crackers made by Special K! I had some of those too:o:tongue:

Last night I had wasabi crusted Ahi Tuna over a bed of rice and veggies coupled with a glass of wine at the Cheesecake Factory.

I love fish too, liked your presentation. I could eat fish every night rather than pasta, which I only make some times. Had some ahi tuna for Valentine's while sweetie ordered something unhealthy lol.

Tonight I had chicken and turkey sub with baked potato chips. Mmm. Sometimes I crave for the simple stuff :)

Thanks for the recipe. Vegan is no animal product so I will have to avoid the butter and parmesan. But I'm not starting till next month :tongue:
