Depends on what restaurant hubby decides to take me to.

But normally, "if" I was cooking........hmmmmm, we would be having filet migon, sweet potato and a salad with mixed greens, cranraisins, pecans, tomatoes, cucumber, green olives, onions and spices (oregano/garlic powder).

Lucky duck..hope you enjoy your night out. My hubby is sleeping from last night's sound gig. He got home at 4 am and woke up at 9 and then went back to sleep around 1:30. And he has another gig tomorrow. Poor fella.

Do you make the sweet potato like a baked potato? Filet is my favorite!!

7 Layer cookies/rainbow cookies

***WARNING THIS IS A 2DAY PROCESS AND IS A BIT PRICEY BECAUSE OF THE ALMOND PASTE***

8 ounces almond paste
1 cup butter, softened
1 cup white sugar
4 eggs, separated
2 cups all-purpose flour
6 drops gel red food coloring
6 drops gel green food coloring
1/4 cup seedless red raspberry jam
1/4 cup apricot jam(if you dont like apricot you can use raspberry only but just double it)
1 cup semisweet chocolate chips, melted

heat oven to 350
Line three 9x13 inch baking pans with parchment paper

In a large bowl, break apart almond paste with a fork <~~~ MAKE SURE YOU BREAK IT GOOD OR YOU WILL SEE CHUNKS IN THE COOKIES and mix together with butter, sugar, and egg yolks

When mixture is smooth add flour to form a dough

beat egg whites until soft peaks form add into the dough

Divide dough into 3 equal portions. <~~~that is also important or you will have lap sided cookies

Mix one portion with red food coloring, and one with green food coloring.

Spread each portion into one of the prepared baking pans.

Bake 10 to 12 minutes in the preheated oven, until lightly browned remove from pan and parchment paper, and cool completely

Place green layer onto a piece of plastic wrap large enough to wrap all three layers. Spread green layer with raspberry jam, and top with uncolored layer. Spread with apricot jam, and top with pink layer

Transfer layers to a baking sheet, and enclose with plastic wrap. Place a heavy pan or cutting board on top of wrapped layers to compress. Chill in the refrigerator 8 hours, or overnight.

Remove plastic wrap. Top with melted chocolate chips, and refrigerate 1 hour, or until chocolate is firm flip over do the other side and put in again for 1 hour

I have some new ideas now:wink5:

Tonight, we are having Chicken Cacciatore with Cesar salad and garlic bread. The recipe came from the Disney Cookbook and it is served at Chef Mickey's (I have never been there for anything other than breakfast, but once I tried the recipe I was hooked).

1/4 cup Vegetable Oil
1 whole chicken cut into 8 pieces (I actually use boneless skinless chicken breast)
1 cup finely chopped onion
1/2 lb sliced mushrooms
1 Tablespoon chooped garlic (I like garlic and use two whole cloves chopped)
28 oz canned diced tomato (or 2 cups chopped fresh tomato)
1/2 cup Red Wine (I use Italian wine, usually Masi)
1 Tablespoon fresh chopped Oregano
1 Tablespoon fresh chopped Basil
1 Tablespoon fresh chopped Thyme

1. Heat the oil over medium skillet.
2. Brown the chicken, remove and set aside.
3. Brown the onions, mushrooms and garlic.
4. After the mixture is cooked, all the rest of the ingredients, including the chicken and any juices in the plate.
5. Simmer, stirring occasionally to break up the tomatoes for approximately 30 minutes or until the chicken is tender.
6. Serve over fresh cooked pasta (I use spaghetini).

I usually make it in advance (so that the chicken has a couple of hours to soak in the juices and all the flavors) and serve it over pasta with freshly grated parmesan (I love Reggiano Parm).

Last night, we went by a chip truck and got one of my favorites (but it is so fatty, it is only a once in a while treat). It is called Poutine and I had no idea what it was before I lived here, but it is homemade french fries with cheese curds and gravy. BTW- the cheese curds are not like cottage cheese curds...the closest thing I can compare it to is mozarella cheese. YUM!!

Today is a rainy, yucky and cold day and tonight we are having another Disney recipe..Meatloaf, which has never been one of my favorites, but when Marco ordered it at a Disney restaurant called Prime Time Cafe, I was hooked.
I also made homemade macaroni and cheese (easy to make...1 1/2 cups cooked elbow macaroni, 1 1/2 cup cheddar cheese in small cubes, 1 1/2 cup milk and 1 egg. Mix all ingredients, salt and peper to taste and bake 1 hour at 350).

I gotta give my grandmother the credit...it is her recipe and I have loved it my whole life. Not really sure what it adds because I have never tried it without, but it does mix with the milk and help coat the macaroni. You should give it a try. Grandma has always been a great cook.:wink5:

Never tried the egg in the maccaroni and cheese...........what does it actually do for the flavor or texture??? I pretty much do your recipe but I also add 1 tablespoon of flour and 3 tablespooons of butter in with the cheese& milk in a pan melting and then mixing it in with the maccaroni.

Carol I think the egg would kind of bind the maccaroni together. Adding the flour like you do probably does something similar.

Mix all ingredients, salt and peper to taste and bake 1 hour at 350).

that sounds yummy! that ill try tommrrow :lol2: but tonight for dinner is rice w/chopmeat and vegs. its quick

1lb chop meat some onion some basil and a little olive oil cook until meat is almost all brown then add some frozen mixed vegs put the lid on and let it steam with the meat about 10 min ... while thats going on you make the rice once cooked mix together and boom dinner is ready

Sounds quick and good...but, what is "chopmeat"? Like stew meat, cut into bite size chunks? Or ground beef?

xobklynqt143
06-02-2009, 10:32 AM
2 lbs ground beef
1 lb ground pork
4 eggs
1 cup bread crumbs
1/2 cup diced onion
1/4 cup diced green pepper
1/4 cup diced red pepper
2 Tbsp worcestershire sauce
Salt and pepper to taste
1/2 cup Meatloaf glaze (recipe below)

Combine all ingredients and put in a greased pan. Bake at 350 for an hour (internal temp 155). Brush meatloaf with glaze and bake another 10 minutes. Let set for 10 minutes and then serve.

Glaze
1/2 cup ketchup
1 Tbsp brown sugar
1 tsp dijon mustard
1/2 tsp worcestershire sauce

**I use an entire whole small green and red pepper and I also double the glaze (just because it is yummy).**!

* whole grain spaghetti, cooked
* add browned ground chuck and mushrooms to spaghetti sauce
* pour sauce mixture over cooked spaghetti
* stir in cubes of Velveeta cheese
* top with mozzerella cheese and parmesan cheese

I use to get the bagged salads but then we have salad a LOT so I decided to get the red leaf or green leaf which is a whole lot cheaper and you get a whole lot more lettuce for your money. Just wash, cut and eat. We went to a restaurant called "Crispers" the other night and they have some of the most unusual but scrumpteous salads. I would never have thought to add some of the things until I had them in the salad at the restaurant. The one thing that I do that is "bad" is to put the pecans in a pan with butter and warm them up.....:o:o:o:o

Last night we had oven roasted cubed red potatoes with olive oil and Lipton Onion Soup mixed in and baked catfish double-dipped in egg/milk and Italian bread crumbs. Was very tastey but I think I should have only used half of the Lipton Onion Soup since I made just a small batch for 2. I use to make them all the time when the kids were home or company and always used the whole bag but also had double the potatoes; so it was a bit overwhelming at first (of course the butter and olive oil I cooked them in helped flavor it a bit too:p)

I din't make dinner last night because we went to a friend's house and she cooked...and it is true, anything you don't have to cook automatically tastes better. My buddy is an excellent cook and we have never had anything that wasn't wonderful and last night was fresh penne pasta with grill chicken, bacon, parsley...kind of a carbonara sauce with garlic bread.
I made almond crusted cheesecake. I made the cheesecake and then you mix 6 oz of almonds with 6 oz of sugar and one egge white and cook 12 minutes at 250. I also made a fruit sauce- 1 cup of strawberries, blueberries and raspberries pureed and heated with 1/4 cup sugar. When it comes to a boil, you add 2 cups pureed black cherries and once blended, remove and cool before serving.

I have THREE grandchildren - a ten year old boy, a two year old boy and a precocious 2 year old girl! They are great kids and we have the most wonderful times. Yesterday the boys and I went to an event at our Mall - it was called Mini-Chefs. There were tables sponsored by TGIF, Chick-Filet, Cheeseburger in Paradise, pizza, pretzel and cookie places, kitchen stores etc. and each table had a different food item that the kids helped create and then got to eat. It was a lot of fun!

Grilled chicken is great to use in the fight with weight loss.
Take some chicken cutlets and marinate them in , olive oil, lemon juice, salt , pepper, and Misses Dash. Then grill them on the barbeque or on the grill pan.

That sounds delicious! And I LOVE chicken...one big problem....My hubby HATES it...and he is the main cook in my house. I blame him for my extra L.B.'s. He is Chef BoyRDee made over. He uses as much butter, oil and mayo as he can shove in me.

Oh, and his arteries are clear as a bell.....

Usually when I get serious about eating better, I have to buy food for him and food for me and it gets very costly. Then he gets a bit upset if I don't eat his dinners. He is just like his dad. Ugh.

However, I have to say this....if I cook dinner...and put it under his nose, he will generally go ahead and eat it and not say anything (except for chicken).

I just need to cook more and get him out of the kitchen.....but gosh his southern cooking is so darn good....and he makes some pretty darn cusine too!

It is nothing for me to walk in the house to the smell of Shrimp Scampi and a London broil that just came off the grill.....

I am going to just make hamburgers and fries. It's so hot here to cook :(

Speaking of burgers and fries... rachael ray was on TV when I turned it on this morning and omg she was making a DELICIOUS sounding burger. It was a bacon bacon cheddar cheese burger. It had bacon pieces and chopped onion mixed in the ground beef also mixed with a couple tbs of worshtishire sauce. Put them in their patties and let it brown some then put a little beer in the frying pan and wait for it to finish frying. Of course put the cheddar cheese on top. She also made a sauce for it that I'm going to skip but it was horseradish, dijon mustard, and sour cream. Take the burgers out and put two pieces of bacon on top and whatever else. OMG once I get through my surgery recovery, I'm so going to try it.
