Pina Colada Rum Cake

Went to a friend's house last night and tried a new desert recipe. It was a hit with everyone. Rum in the cake mix and rum in the glaze but not overwhelming. Soooooo moist! It called for "Coco Lopez" which I never heard of. I had fun making it and was do glad everyone loved it. Hubby was really raving about it so I went to bed with a smile on my face. ......not sure if it was because of all the compliments or the rum!

It sounds really good! I like the flavor of rum in desserts. The smile on your face was probably due to both the compliments and the rum!!! Bet you slept well anyway!

Sounds yummy. I've never heard of Coco Lopez either. Fun to make something that everyone likes.

I always put rum in my cakes and even in my cookies when I make some.

Is the rum an option? I don't drink any liquor because of my meds.

No! It's the rum that gives it through special flavor and moisture. The glaze has coco lopez, confectioners sugar and rum. Without the rum, its just an ordinary cake.

We finished off the cake last night........hubby had two pieces so I think this is going to be one of his favorites!

The rum in the cake batter would not be a problem. The alcohol cooks out and just the flavor remains. It's like adding wine into a stew. Just the flavor remains. Not sure about the glaze. If the glaze was cooked first it would be fine. it it was just kinda stirred together that might retain some alcohol.
